Wisconsin's slogan "America's Dairyland" today means artisan cheeses or bland cheese made by sparkling clean factories. Decades ago, there were small cheese factories specializing common varieties sometimes brought to Wisconsin by recent immigrants including swiss, limburger, provolone, cheddar and other varieties. The small factories were sprinkled throughout the state in small towns and on rural roads.
